Mead Glazed Ham Bites
These bites have a delicate, honey flavor that melds well with the natural depth of the ham, reminiscent of holiday ham served during the Winter months but bite-sized, while the mead adds a lightness that makes it refreshing for a nice, light Spring dish or a sweet addition to Summer picnics. For a bit of additional flavor, try adding cut carrots into the pot to slow cook alongside the meat or pair it with braised mulberry leaves or spinach. This recipe is laid back and simple, making it a good choice for inexperienced cooks to try out. Remember to wash your produce!

Ingredients

  • (1 LB) Cubed Ham
  • (3) Green Onions
  • (3) Green Garlic
  • (750 mL) Your Favorite Mead
  • (2 sticks) Cinnamon
  • (2 leaves) Bay Leaves
  • (1 TBSP) Brown Sugar
  • (1/2 Cup) Honey

Directions

  1. Prepare the green onions and garlic. Rinse your garlic and onions, then trim the roots off. Cut the stems from the tops, setting the leaves aside for use in a different recipe or to use later for garnish. If the pot you're using is small, you may want to cut the stems in half.
  2. Place the cubed ham, onions, garlic, cinnamon sticks and bay leaves into the pot, then add the mead and simmer, covered. Use a low heat and let it simmer for approx. 4 hours. If you want to cook the carrots along with the ham, add them around 20-30 minutes before the meat is finished and let it simmer until they've reached your desired tenderness. 
  3. Separate 1 cup of the mead from the pot into a small saucepan, straining out any fat. Add the brown sugar and honey, then bring to a low boil and cook until it's reduced by about half, stirring regularly. Make sure to scrape the sides of the pan. Once the glaze is thick enough to coat the back of a wooden spoon, remove from heat. 
  4. Take the cubed ham from the mead and toss it in the glaze. If you want to remove any fat, trim it quickly. This step should be done fairly quick, to maximize the moisture in the ham. Once the ham is well-coated, serve along side your preferred veggies!
